Smashed and Fried Potatoes

This is another super-easy side that can go with anything.

Crushed and Fried Potatoes

Serves 4

1 lb miniature creamer potatoes (though small reds would work well here too), scrubbed

2 tbs olive oil

2 tsp butter

salt and pepper to taste

Scrub the potatoes and add to pot of boiling water with salt to taste ( I usually salt the water the same as I would for pasta).

Boil potatoes until soft, you can stick a fork through but not falling apart – 8-10 minutes.

Drain potatoes. Take potatoes and smash with the side of a knife (or a meat tenderizer) once – more cracked than smashed really.

Heat olive oil and butter in hot pan (I used a cast iron frying pan for this that was large enough for the potatoes to be placed in one layer), add in potatoes, salt and pepper to taste, let brown on one side and flip, continue this until you get the desired crispiness.

Simple and easy and could be served for breakfast, lunch, or dinner.
